Capers come from the Mediterranean bush capparis spinosa and are immature flower buds that are pickled (typically in salt, brine or vinegar) after hand picking. These Agostino Recca capers are imported from Italy and preserved in wine vinegar for an exotic taste. Agostino Recca is a Sicilian company that produces delicious Italian treats like anchovies, capers and olive oil. The company gathers these capers from the island of Pantelleria, off the coast of Sicily. The capers have a distinctively unique flavor because of the rich, volcanic soil of the Pantelleria island. The floral flavor and firm texture come from a wine vinegar curing process.

Cooking with Capers

These wine vinegar capers do not need to be cooked and can be used whole or finely chopped. To ensure the best flavor add only towards the end of the cooking process if possible. They work wonderfully in a caponata (a Sicilian cooked vegetable salad), a puttanesca recipe or a lemon, caper and butter sauce for a fish dish. These specific dishes involve ingredients that carefully compliment the rich flavor of capers. Traditionally capers are used in seafood dishes as well as egg dishes and salads. Sauces, especially tomato based ones, provide a good base for a wine vinegar caper.
