Couscous, traditionally made of semolina and originating from North Africa, is great starch base for many dishes. In Sicily’s province of Trapani, it is a staple food. Farro is a type of grain that has been known for its nutty flavor and slightly crunchy texture for thousands of years. There is much debate in different areas of the world over what type of grain farro actually is. In Italy, other grains such as emmer, spelt and einkorn (size of actual grain is the main difference between these varieties) are also known as farro. This grain is most commonly used in soups and salads.
Quinoa, pronounced “kee-NO-wah” or “KEEN-wah”, is a grain from which the seeds are commonly eaten in many different dishes. Nutritionally, quinoa is packed with a high protein content, balanced amino acids, dietary fiber and iron. Quinoa is also gluten-free. Many cooking guides suggest preparing quinoa in a manner similar to rice, either in a pot or rice cooker.
