$15.99 Appenzeller Appenzeller (Appenzell): (AP-en-zeller) Origin: Switzerland-Appenzell Type: Cow's Milk, unpasteurized; firm, inedible rind. Characteristics: Ivory colored, small holes; spicy, fruity, tangy flavor; strong aroma. The wheels are washed frequently and aged for a minimum of four months, until they develop an herbaceous, nutty flavor and a smooth, milky finish. Appenzeller goes well with a red Burgundy.
