$11.29 Auricchio Provolone Our Auricchio Provolone is an aged Italian Provolone that is particularly sharp. It is often regarded as one of the best-tasting Provolones in the world. In Italian grocery stores, this cheese is often seen dangling by rope from the rafters, which makes it a very well known cheese throughout Italy. The aging process allows for the flavor of the cheese to develop over time, which ultimately adds character to its eventual taste. Auricchio Provolone is primarily a product of cow farms, as it is made with cows' milk. Light yellow in color, it is a very smooth cheese, producing a strong aroma and offering a bold, nutty flavor. A full wheel of this aged Italian Provolone weighs around 120 lbs. If you plan to buy it in wheels, make sure to bring a few helpers!
