Pesto originates from Genoa in northern Italy, a region that has ideal soil for the cultivation of pesto’s basic ingredients. This sauce is made from a mixture of basil, crushed garlic, hard cheese (parmigiano-reggiano, pecorino or both), pine nuts and a bit of olive oil. Traditionally, pesto is processed using a mortar and pestle to properly grind up these ingredients. It is presumed that basil, the main component, first came from Africa’s northern coasts, but the herb had also been known in the Mediterranean region since the time of the Romans.
Variations on this classic combination come from many countries, all of which inspire the different varieties of pesto that we offer. Here are some easy ways to incorporate pesto into your everyday meals: spread it on bruschetta, put it on pizza instead of traditional pizza sauce, dips, and of course, you can always put pesto on any pasta dish.
