In the late 1800s, the Delouis family starts a vinegar company in Limoges, France and by the mid-1900s they started making their fabulously famous mustards.
This was a simple transition for the company because vinegar is the base of mustard.
To make this mustard traditionally Dijon, the mustard seeds are soaked in verguice (sour juice from unripened grapes) before they are used.
In addition to the soaking process, the mustard contains no additives or preservatives to make it properly Dijon.
