Chickpea flour, also known as gram flour, is a naturally gluten free flour made from ground chickpeas.
It has a fine texture and a high amount of protein when compared to other flours.
Chickpea flour is a staple ingredient in India, Pakistan and Bangladesh.
The flour is even mixed with water or yogurt and used as a facial exfoliant, a common practice in India!
It is also great for vegan cooks because when it is mixed with an equal amount of water, it can properly replace eggs in many recipes.
The flour is made by baking pre-cooked chickpeas, leaving them to cool off overnight and then grinding them down to a fine powder using a mortar and pestle.

Use this flour to make farinata (an unleavened pancake originally from Genoa), panelle (polenta made with chickpea flour) and in combination with other gluten free flours for additional breadlike items. Another popular use is as a gravy thickener or as a cream sauce base. Some even suggest making chocolate chip cookies with this flour.
