Grilled Cheese Sandwich with Manchego and Prosciutto


Yields 2 Servings.
Ingredients:

3 tbsp. butter, at room temperature
2 Mini Ciabatta’s
6 oz. Manchego Cheese, thinly sliced
4 oz. Prosciutto

Preparation:
Line baking sheet with waxed paper.
Slice Ciabatta in halves.
Spread butter on all 4 sides (divide butter equally between slices)
Place two pieces of the Ciabatta bread on the baking sheet, buttered sides down.
Top each piece with half the Manchego cheese,
place Prosciutto on top of the cheese, again divided equally.
Top with the remaining cheese, then the remaining bread, buttered side up.
Refrigerate for 30 minutes (can be made up to 8 hours ahead of time.)
Cover with plastic wrap.
Heat Panini press and cook sandwiches or heat in frying pan the traditional way.
