Austria's Chorherrenkase is a cheese from cow milk, often semi-soft. This dome-shaped cheese with a cross shape pressed into the top is semi-firm and springy, with many tiny holes, it is made of a combination of fresh milk and buttermilk. This combo gives it a mild, milky and refreshing lactic finish to round out its blossoming of robust floral-fruitiness. A lovely table cheese that evokes some of the milder Trappist cheeses of yore.
