Made in Rome, Sini Fulvi has a nice depth to it. Most commonly known as a grating cheese, but Dear Heart says it could be used as a table cheese also and of all people, she knows her cheese. Pungent and pleasantly briny, it seems to melt on the tongue. Since it is far less hard and dry than Sardinian Pecorinos, when it is grated onto hot food, the slivers blend, but does not disappear.
