This is November's Sampler of the Month which includes Havarti, Fontina, Castello Blue and Esrom cheeses.
Havarti is light to pale yellow in color, smooth inside and buttery on the surface, Havarti has a hidden intensity that makes it a favorite for dinner parties.
Fontina Cheese comes from the Val d Aosta in the Italian Alps which can be located in Northern Italy. Fontina is made from unpasteurized cow’s milk, the cow’s which the cheese is made from are highly controlled and they only graze on the alpine grass and herbs within the Val d Aosta Area.
Castello Blue has a unique combination of blue-green and reddish molds. These molds give the cheese a distinct aroma and taste. Castello Blue has a Brie-like texture, with the blue color in fairly thick, horizontal lines throughout the body of the cheese.
Esrom is made in flat rectangular shapes and is usually wrapped for preservation. It's flavor is quite rich and aromatic and seems to grow on the palate. It get a stronger aroma over time.
