Drunken Goat is wine-bathed cheese, similar to Spanish wine cheese, that is made from pasteurized goat's milk in the Murcia region of Spain.
Roncal is a raw sheep's milk cheese with a sweet herb taste, it gets more tangy as it ages.
Mahon is a kind of firm part-skim cow's milk cheese, rubbed with olive oil and paprika for a intense flavor. It's best served at room temperature.
Campo De Montiaban is made from sheep, cow and goat's milk. It's smooth like a dark chocolate.
