The goat’s milk base of this particular Colby gives it just a slightly stronger taste than your average already smooth Colby, Colby but also makes it sit well in your tummy. A versatile cheese, this Colby Goat Cheese goes as well on crackers as it does on a variety of sandwiches.
Colby cheese is similar to cheddar but does not undergo the “cheddaring” process, which expels moisture and condenses the cheese. Compared to cheddar, Colby is typically slightly milder and moist, and creamy. Colby is also known as a great melter. Colby cheese was in invented near Colby Wisconsin after the Civil War, and is one of the states more notable claims to cheese fame. A much better American cheese than “American Cheese”, we might add.
This particular Colby is made in an American cheese-making region famous in its own right - the Amish settlements in and around the village of Middleton in Northeastern Ohio. This is an organic farming cooperative, well-known for a variety of quality, wholesome, delicious cheeses. Their Amish Goat Colby Longhorn is no exception.
