$7.89 Product Info:
The Yellow Eye Stueben Bean (Phaseolus Vulgaris) is related to the Kidney Bean. They are about 1/2 inch in length, oval shaped bean, ivory colored with a mustard colored splotch radiating from the inner seam. The very center of the inner seam has a white center encircled by a light brown ring. Yellow Eye Stueben beans have a mild flavor, firm texture and the colors are retained after cooking. The Stueben Yellow Eyed beans have more of a mustard color than the Maine Yellow Eye beans. This bean is also referred as a Dot-Eye bean, Molasses-Face bean and Yellow-Eyed China bean. Yellow Eyes are commonly grown in Michigan, Idaho, and California.
Suggested Use:
The mild flavor of this bean works well either when bland dishes are desired, or the bean can be a vehicle for carrying just about any strong flavor. They are particularly good when cooked with Portobella or Black Trumpet mushrooms.
