The old fashion capicollo is sweet cooked and contains a little black pepper, while remaining very tender. It's a sausage product using a cut of meat taken from the back of the neck of pork, from which it derives its name.
It consists of a single whole cut of meat that is salted and seasoned with spices, sausages, smoked and left to mature for two to four months. The capicollo has a very distinct aroma, as well as a smooth texture. Over the last few decades it has become one of the popular sausage products on the market. All and all, making it a one of a kind addition to most meals.
