Prosciutto di San Daniele is a cured Italian meat from the region of Udine. Prosciutto di San Daniele is ham that has been seasoned with salt for a unique flavor. The ham is then dried and aged for a minimum of 12 months. This is served sliced and sold by the pound.
What it takes to be considered Prosciutto Di San
Firstly, the origin of the raw material. The thighs must come from pigs bred in one of the ten regions of Northern Central Italy (Emilia Romagna, Tuscany, Lazio, Friuli, Abruzzo, Venezia Giulia, Lombardy, Piedmont, Marche, Umbria or Veneto). Secondly, respect for the production method. Since any form of freezing of the meat is forbidden, the fresh thighs must rapidly reach the town of Friuli, to begin the production process that recreates the natural rhythm of the seasons, using sea salt, without the addition of chemical additives. Finally, the subsequent development must occur at San Daniele del Friuli. |
