Wood Ear/Cloud Ear Mushrooms

Wood ear mushrooms, also called “cloud mushrooms,” are very popular in Asian cuisine. Typically sold as dried mushrooms, these particular fungi have an ear-shaped top. Obviously, it is from this shape that its various nicknames are derived. While the cap is typically a darker brown or black, the underside is more of a dusty gray, which provides a unique contrast.

Unlike many mushrooms before and after them, wood ear mushrooms aren’t necessarily known for their outright flavor. Instead, they’re utilized in dishes that require their crispy texture and bold color. In many Asian countries, including China, cloud mushrooms are highly regarded by those who value a healthy life. They believe that eating the dried mushrooms strengthens breathing, capacitates circulation, and benefits overall well being. Interestingly enough, recent studies seem to confirm these beliefs, citing a specific chemical in the mushrooms that combats blood clotting.

When it comes to cooking, this mushroom is an added commodity to any ingredient list. Aside from being used in various Asian meat and vegetable dishes, it goes well with soup, too. There are, of course, a few things that you should keep in mind when preparing wood ear mushrooms for consumption. Never cook them for a long period of time, and try to avoid letting them sit for too long (after being cooked). This type of dried mushroom is best served right after being cooked, so keep that in mind when preparing your dish!
