Soft ripened cheese, nutty, rich, creamy and quite a rare find. It's got a mild flavor, reminiscent of Brie. It was named after its creator, Henri Boursault in 1953. Aging of this cheese takes about two months. The taste is smooth and almost buttery, with a hint of mushrooms. The interior is solid and it has a refreshing tang. Boursault is cylindrical in shape with particular pink tones.
