The artichoke bottom is simply the underside of the heart and has a delicious flavor and a tender texture.

In each Roland can you will find 5-7 extra large bottoms that have been rinsed briefly in cold water.
You can use these bottoms as you would the regular heart although many recipes specifically call for the bottom instead of the heart.
Because of the larger size they are good for cutting down into smaller pieces and adding to salads and pasta dishes.
Many people substitute artichoke bottoms in place of other carbohydrates (for example, substitute the bottoms for potatoes in stews and soups).
