Roland Abalone Mushrooms

The Abalone mushroom, also known as the White Elf, is a variety of oyster mushroom that is originally native to China, but is now cultivated in other countries and various parts of the United States including California, Oregon and Washington. It is named for the abalone, an aquatic shellfish whose shape is similar to the mushroom’s shape. This mushroom is found near dead or dying trees, specifically Alder trees, which provide the very special growing conditions that Abalones require.

These Roland brand Abalone mushrooms have been cultivated in Thailand and offer dense, spongy flesh traditional to oyster mushrooms. They have an earthy, buttery flavor and a texture that is velvety smooth to the tongue. The buttery flavor is quite subtle and similar to the taste of lobster or very tender veal.

Abalone mushrooms taste best when cooked with certain items including seafood, pork, garlic, ginger, soy, and Asian vegetables and herbs. Throw them into any curry, teriyaki, or stir-fry for some new and interesting flavors. A great idea for vegetarians is to grill the Abalone mushroom similar to a portobello and serve it as a meat substitute or as a simple side dish.

A tip to keep in mind when using these mushrooms in your kitchen: the flavors come through best when they are not overcooked.
