People are often confused as to the difference between capers and caperberries. Wild caperberries are the fruit of the caper bush (capparis spinosa) while capers are simply the immature buds. The berries are oblong, slightly green fruits that are about the size of a grape. They grow wild throughout the Mediterranean area, have a much milder taste than capers (due to a smaller amount of acid) and also have a slight lemon flavor. The famous Roland brand brings us gourmet caperberries that are brined in water, salt and vinegar. These caperberries in brine have a zesty tang almost reminiscent of eucalyptus and a slightly grainy texture that will delight your taste buds.

There are so many ways to use this unique vegetable. Generally, these berried are enjoyed in the same way you eat olives or pickles. Try using them to make an appetizer tray with some fresh bread and olive oil. Or substitute them for olives in pasta dishes, Greek salads and even martinis for a new and interesting flavor. Use these caperberries as a garnish for cuts of lamb, in a chicken piccata recipe or in dishes with your favorite kind of seafood.

Keep in mind that sliced caperberries work well in recipes that call for capers, especially if you wish to have the dish be less acidic. Just remember that substituting capers for carperberries rarely works.
