Capers are the edible buds of the capparis spinosa plant, a bush that is native to the Mediterranean region. After handpicking, capers are traditionally pickled and then jarred. A Carnegie Mellon graduate started Salonika, a locally owned Pittsburgh company located in the Strip District. Salonika imports and distributes these tasty non-pareilles capers. Salonika small capers are preserved in simple ingredients using only water, salt and vinegar. This easy brining combination ensures that the caper delivers an unadulterated tart and salty flavor to all of your best dishes.

Non-pareilles capers are the smallest and most desirable variety of capers. To be considered a non-pareil, the caper cannot measure over seven millimeters. Non-pareilles are picked off the capparis spinosa bush early to keep their small size. The French coined the name non-pareil (meaning “without equal”) because they consider these small capers to be the finest variety by far.

Capers are frequently used to add flavor to appetizers. They are also wonderful when added to sauces and main dishes, especially veal, pasta and fish entrees. Try topping traditional deviled eggs with this tiny vegetable to a delicious update to a classic recipe. Some people even suggest frying non-pareilles capers for a crispy and nutty crunch when added to salads and other vegetable dishes!
