Emmentaler, a cheese of Swiss origin, is typically called 'Swiss cheese' throughout North America. While this holds true most of the time, the term 'Swiss cheese' does not always guarantee that the cheese being referred to is Emmentaler. It is characterized by the large holes (sometimes called eyes) that are caused by non-removed carbon dioxide bubbles during production. This cheese comes in multiple varieties throughout Switzerland and the rest of the world. The two most popular Swiss varieties are the AOC and Premier Cru, both of which consist of different aging periods and techniques.
Emmentaler cheese is partially skimmed, unpasteurized cow's milk. It is relatively firm and has a natural rind. It is typically yellowish-tan in color and has a mild, nutty, fruity flavor.
