Type: Full-cream cow's milk with a crumbly, semi-hard texture. Alternated with un-pasteurized whole cow's milk and the cream of two-milking, aged 6-9 months.
Characteristics: Blue Cheese alternated by a semi-hard, medium tasting cheese.
