Taleggio D.O.C.

Taleggio D.O.C., named for the alpine valley in the Lombardy region of Italy from which it comes (the Val Taleggio), is one of our great imported Italian cheeses. Taleggio is a cheese that is smear-ripened and washed-rind. While some of you may know the technical definitions of these two cheese characteristics, both simply translate to better, stronger flavor. And believe us, that couldn't be more true.

Historically speaking, Taleggio D.O.C. is quite possibly one of the most ancient Italian soft cheeses, with its name being used in the caverns of the alpine valley since before the tenth century. Production of the cheese occurs in the fall and winter months as the cattle grow tired; it usually takes anywhere from six to ten weeks for the curd to reach maturation. Presently, it's not uncommon for different ingredients to be added to spice up the flavor of the cheese. Different spices, fresh raisins, a variety of nuts, and lemons are a few examples.

If you're looking for a soft Italian cheese that compliments a wide variety of dishes, Taleggio is certainly a viable option. The flavor is predominantly nutty with a tangy fruit-like finish, while the aroma is actually very cheesy. This cheese goes well with various meats, simple sandwiches, sliced bruschetta, and various Italian Red wines. One of our personal favorites is to serve it grated over a big steak salad! Yum!

With reference to the cheese in subject, we hereby specify that it is a washed rind cheese with a typical flora composed mainly by moulds. From the first stages of ripening the rind has more or less common moldy where the origin of fungal contamination is due to the native flora of ripening environments. The establishment of typical micro-flora is an essential and necessary peculiarity for the achievement of optimal organoleptic characteristics of the product. With reference to above we specify that the presence of mold on the surface is a typical and natural element of the Taleggio that does not in any way affect the quality of the product.
